This place allows us to give continuity to our work of recovery of vineyards in the Sierra de Gredos, putting in value the two native varieties of the area, the Grenache and the Albillo Real. We produce in the facilities of the old winery of Cebreros in collaboration with the current managers of the same. We work about 2 hectares of vineyard. Old vineyard on bush, low yield, and high expression of the soil is what makes the whole area unique.

 

         

work we do

We have 2 hectares of vineyards on bush of Garnacha and Albillo varieties. The estates are in the Alberche Valley, an area of old vineyards with poor soils and very marked by granite and slate.

The work in the vineyard is carried out in collaboration with the cooperative’s management company.

We are governed by ecological agriculture, so we seek to have a living soil and fruit as healthy as possible. Harvesting, as in all other places, is manual.

The plant’s vegetative cycle marks out the processes to be carried out in the vineyard, so that we can achieve the best possible balance of freshness and complexity in the wines.

As far as the processes in the winery are concerned, we work as respectfully as possible, harvesting by hand, partial destemming of the grapes, spontaneous fermentations, delicate pressing and ageing in large vats or used barrels, so that the wood accompanies the process of evolution of the wine in the most delicate way possible.

The reds are aged for about 9 months and the whites for about 12 months.
